Chef Akashdeep Tomar, Chef De Cuisine, at Novotel Goa Panjim, says, “The ‘Sunshine on a Plate’ Summer Special Dessert Menu was inspired by the vibrant, sun- spirit of Goa and the joy that summer brings.
"We wanted to capture the essence of the season — bright, refreshing, and full of life — by featuring desserts that not only look , but also evoke the feeling of sunshine with every bite,” he adds.

“By pairing mangoes with ingredients like matcha, almonds and even chocolate, we create unique flavour combinations that are both nostalgic and innovative,” says chef Akashdeep. “Our goal was to create a menu that celebrates tropical fruits, flavours, and the carefree mood of summer, offering guests a sweet escape that feels like a holiday on a plate.”
