Sabudana vada, a beloved Indian snack, is the best of both worlds - crispy outside and soft inside, and bursting with flavours. This is a Navratri must-have, and you only need a few ingredients. This beginner-friendly sago pearl patty recipe is the perfect snack to share with your family and friends. And let’s not forget about the compliments that're coming your way.


Ingredients (serves 4): 1 cup soaked sabudana (tapioca pearls), 2 boiled potatoes (mashed), 1/4 cup roasted peanuts (crushed), 2 green chilies (finely chopped), grated ginger, cumin, lemon juice, 1 tsp rock salt.

How to make: Start by soaking the tapioca pearls. You can buy it from an Asian store or online. Soak the tapioca pearls in water for 4-5 hours. Now boil the potatoes, peel and mash them. Roast some peanuts. Now crush them so that you get the creamy, rich goodness of the nuts in every bite. Finely chop some hot green chillies. Now add salt as per taste. Add some grated ginger, which is good for the gut, and also gives a hint of spice. Add a pinch of cumin and the juice of half a lime. Now mix these ingredients into a bowl until they become a dough. Take small portions and shape them into bite-sized flat patties (8-10). Preheat the air fryer to 180°C. Now arrange the patties in the basket, and spray with minimal oil. Let them air fry for 12-15 minutes, and flip it halfway, until golden. You can serve it with a dip or eat it as it is.

Ingredients (serves 4): 4 boiled potatoes (cubed), ¼ pomegranate seeds, 1 tsp rock salt, 1-2 green chilies (slivered), fresh coriander for garnish.

How to make: Boil the potatoes, peel and cut them into small cubes. Sprinkle some salt, lemon juice, and slivered chillies. Toss to coat the potatoes. Preheat your air fryer to 190°C. Spread the potatoes into the basket. Air fry for 10-12 minutes until the edges are crisp. You can garnish with the pomegranate seeds and squeeze extra lemon. This recipe only takes 15 minutes, so it will also save you some time.
